I always said that being vegetarian was a huge missed steak. Get it!?
It's funny though. I stand on my throne of meats, spreading the good carnivorian word, but when I stop to think about it, I truly don't eat as much as I think.
Many of my favorite foods and dishes do not contain an ounce of meat. So, this is me stepping down from my throne of meats. I retire. And I'm retiring to my "I'll eat what I want, when I want" cave to dominate these vegetarian rainbow bowls. I could easily eat 4 of them in one sitting. Okay, you're right, 10 of them.
Oh my gawwwwwwwsh. I would literally hang this picture and frame it. Veggies can be absolutely stunning. All of the colors! SO MANY COLORS. AND WITH JALAPEÑO LIME RANCH?! Get in here, veggies. Bring it in. For a hug. In my belly.
I'm going to shut up now and tell you how to make this.
You will need:
1/2 cup cooked quinoa (I microwave mine.)
1/2 can of black beans, drained
4 baby carrots, chopped
1/2 cucumber, chopped
1 yellow, red or orange pepper, chopped
4 mini heirloom tomatoes, chopped
1/2 avocado, chopped
1 handful of cilantro, chopped
For the sauce:
2 tablespoons sour cream or Greek yogurt
2 tablespoons of your favorite ranch dressing
1 tablespoon of almond milk, plain
1 jalapeño pepper, gutted and seeded
1 tsp minced garlic
1/2 avocado, chopped
Juice of 1/2 lime
Handful of cilantro
Pinch of salt
Combine all sauce materials in a food processor or blender. I used my nutribullet. Blend for about 15-30 seconds. Cover and set aside.
Cook quinoa following the directions of the package. I chose the microwave route because while I may eat healthy, I'm LAZY.
In your favorite bowl, combine the quinoa and black beans in the bottom as your base.
Top your slow carbs with all of your veggies. Just make it pretty. It adds to the amazing ness. Trust me.
Top bowl with as much of your delicious jalapeno ranch as you'd like. Save the rest to drink. (I'm only half way kidding.)
Warning: you will feel like a health diva after you eat this. I ate this and could have sworn I lost 30 pounds and grew a six pack. The flavors are to die for. And the freshness is out of control. Perfect lunch after a very heavy dinner the night before. And you can feel so good about this. It's loaded with so many good things. Gluten free. Vegetarian. Low calorie. Slow carb.
